Indulgent microwave Devil's Food Cupcakes for a quick and decadent dessert for two in just 10 minutes.
Ingredients:
  • 6 tablespoons Gold Medal™ unbleached all-purpose flour
  • 1/2 teaspoon baking powder
  • 3 tablespoons granulated sugar
  • 3 tablespoons packed light brown sugar
  • 1/4 cup unsweetened Dutch processed baking cocoa
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • Powdered sugar
Instructions:
  • Combine flour, baking powder, granulated sugar, brown sugar, and cocoa in a medium bowl. Stir with a whisk until well combined. Add eggs, oil, and milk, then stir with the whisk until smooth.
  • Divide the batter between two (1-cup) microwave-safe coffee cups. Microwave on High for about 3 minutes, or until the edges are set and the centers are nearly cooked. Keep an eye on the cups to prevent overflowing; pause the microwave if needed and resume heating once the batter settles.
  • Sprinkle warm cupcakes with powdered sugar before serving.
