SPAM®-a-licious Cupcakes with Salted Caramel Frosting

Elevate devil's food cupcakes with the beloved classic, SPAM® for a unique twist.
Ingredients:
  • 4 ounces fully cooked luncheon meat (such as SPAM®), grated
  • 1 (15.25 ounce) package devil's food cake mix
  • 1.3333333730698 cups water
  • 1 cup mayonnaise
  • 2 large eggs
  • 0.5 cup butter
  • 1 cup dark brown sugar
  • 0.33333334326744 cup heavy whipping cream
  • 0.25 teaspoon salt
  • 2 cups confectioners' sugar, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare 24 muffin cups by either greasing them or lining them with paper liners.
  • Preheat a large skillet over medium-high heat. Cook and stir grated luncheon meat until browned and crispy, for 5 to 7 minutes. Remove the meat from the skillet and let it cool on a paper towel-lined plate.
  • In a large bowl, use an electric mixer on low speed to combine cake mix, water, mayonnaise, and eggs until just moistened. Increase speed to medium and beat until smooth for about 2 minutes. Gently fold in 2/3 of the fried luncheon meat into the cake batter before spooning into prepared muffin cups.
  • Bake in the preheated oven for around 20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean. Allow to cool in the pans on wire racks until completely cool.
  • In a small saucepan over medium heat, melt butter. Add brown sugar and heavy cream, stir until sugar dissolves. Let it simmer without stirring for 1 minute. Remove from heat, stir in salt, and let it cool completely.
  • Pour the sauce into a spacious bowl and gradually blend in confectioners' sugar one cup at a time until the frosting is at your preferred thickness. Frost the cooled cupcakes and garnish with the remaining fried luncheon meat.
