Prepare a diabetes-friendly pork stroganoff for a delicious and healthy family meal.
Ingredients:
  • 250g fettuccine
  • 13.80 gm olive oil
  • 400g pork fillet, thinly sliced
  • 1 small brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 200g cup mushrooms, thinly sliced
  • 500g jar tomato pasta sauce
  • 185ml can reduced-fat evaporated milk
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • Steamed green beans, to serve
Instructions:
  • Boil pasta in a large saucepan of water according to package instructions until tender. Drain pasta.
  • Heat 1 teaspoon of oil in a large frying pan over medium-high heat. Sauté pork for 2 minutes until nicely browned. Transfer to a bowl.
  • In a skillet, heat the remaining oil over medium heat. Sauté onion and garlic until softened, about 2 to 3 minutes. Add mushrooms and cook until tender, about 2 to 3 minutes. Stir in pasta sauce and simmer until slightly thickened, about 5 minutes. Pour in milk and stir to combine, then cook for an additional 2 minutes. Add the pork and cook until heated through, about 1 minute. Finish by stirring in parsley and serve with pasta and beans.
