Quick and light pork salad ready in 30 minutes.
Ingredients:
  • 146.25 gm whole-berry cranberry sauce
  • 30.90 gm French salad dressing
  • 500g piece pork fillet, trimmed (see notes)
  • 2 large pink lady apples, cored, thinly sliced (see notes)
  • Olive oil cooking spray
  • 350g watercress
  • 57.50 gm walnut pieces, toasted
Instructions:
  • Transfer the cranberry sauce to a microwave-safe bowl and heat on HIGH for 1 minute until melted. Combine 2 tablespoons of the sauce with the dressing in a small bowl. Brush half of the remaining sauce onto the pork on a plate. Toss the apples in the rest of the sauce to coat.
  • Preheat a hot barbecue plate with the hood on high heat. Lightly spray the pork with oil and season generously with salt and pepper. Reduce the heat to medium-high and cook the pork for 3 minutes on each side. Lower the heat to low, then close the barbecue hood and continue cooking for an additional 8 minutes until the pork is cooked through. Transfer the pork to a plate, cover loosely with foil, and set aside to rest for 10 minutes before serving.
  • Preheat barbecue hot plate to medium-high heat. Grill apple slices for 2 to 3 minutes until charred and tender, turning occasionally. In a bowl, mix watercress, grilled apple, walnuts, and dressing. Toss the ingredients together until well combined. Serve the salad alongside the pork.
