Tangy-sweet honey-mustard marinade elevates pork. Charred cabbage and apple provide a delightful crunchy accompaniment.
Ingredients:
  • 0.5 head green or red cabbage, cored and cut into 1/2-inch-thick wedges
  • 2 large apples - cored and sliced into thin wedges
  • 5 tablespoons extra-virgin olive oil divided
  • 1.5 teaspoons kosher salt, divided
  • 0.5 teaspoon black pepper, divided
  • 2 (16 ounce) pork tenderloins
  • 1 tablespoon coarse-grain Dijon-style mustard
  • 2 tablespoons white wine vinegar
  • 2 teaspoons honey
  • 1 teaspoon chopped fresh thyme leaves
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C), positioning one rack in the center and another 4 inches from the broiler. Grease a rimmed sheet pan with cooking spray.
  • Combine cabbage and apples with a flavorful mix of 3 tablespoons of oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper on a baking sheet, ensuring they are evenly spread out.
  • 1. Dry off pork and season with the remaining teaspoon of salt and 1/4 teaspoon of pepper. 2. Combine the remaining 2 tablespoons of oil with mustard, vinegar, honey, and thyme in a small bowl. 3. Coat all sides of the pork with the mixture and place it on top of the cabbage and apples.
  • Roast the tenderloins on the center rack until the thermometer reads 130°F when inserted into the thickest part, approximately 25 minutes.
  • Preheat broiler. Place pan with pork, cabbage, and apples on the top rack under the broiler. Broil until pork is golden-brown, thermometer reads 145°F, and cabbage and apples have a light char, approximately 5 minutes. Rest the pork loosely covered with foil for 10 minutes before slicing. Serve warm with a sprinkle of parsley, if desired.
