Dill Havarti-Stuffed Chicken Breasts

Creamy dill Havarti stuffed chicken breasts, baked to tender perfection in 30 minutes.
Ingredients:
  • 2 boneless skinless chicken breasts
  • 4 oz dill Havarti cheese, sliced
  • 1 tablespoon butter, melted
  • 1/4 teaspoon Italian seasoning
  • Salt and freshly ground pepper to taste
  • 1 medium tomato, sliced
  • 1/2 cup sliced English (seedless) cucumbers
  • 2 teaspoons olive oil
Instructions:
  • Preheat your oven to 400°F and lightly coat a small shallow baking dish with cooking spray.
  • 1. Make a horizontal slit along the thin long edge of each chicken breast to create a pocket without cutting through the opposite side. Stuff each pocket with sliced cheese. Brush chicken with melted butter and season with Italian seasoning, salt, and pepper. Transfer to a baking dish.
  • Bake without a cover for 20 minutes, or until the chicken's juices run clear when you cut the thickest part (should be at least 165°F).
  • Divide tomato and cucumber slices between 2 plates in an artful display. Drizzle with oil and season with salt and pepper. Top each plate with a chicken breast.
