Creamy dill pasta salad with zucchini, carrot, and smoked fish - perfect for a relaxed meal with friends.
Ingredients:
  • 2 cups uncooked rotini pasta or spiral macaroni (6 ounces)
  • 1/2 cup mayonnaise or salad dressing
  • 1/4 cup sour cream or plain yogurt
  • 1 tablespoon chopped fresh dill weed or 1/2 teaspoon dried dill weed
  • 1/2 teaspoon ground mustard
  • 1 can (2 1/4 ounces) sliced ripe olives, drained (1/2 cup)
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 1 medium zucchini, thinly sliced (2 cups)
  • 1 medium carrot, thinly sliced (1/2 cup)
  • 2 cups flaked smoked whitefish or salmon (2/3 pound)
Instructions:
  • Prepare the pasta according to package instructions. Once cooked, rinse the pasta with cold water and drain.
  • In a large bowl, combine mayonnaise, sour cream, dill weed, mustard, salt, and pepper. Add pasta and all remaining ingredients except fish, then toss gently. Lastly, fold in the fish.
  • Chill in the fridge for at least 2 hours, but no more than 24 hours, until cold.
