Decadent dark chocolate and hazelnut cookies, perfect with espresso or milk.
Ingredients:
  • 0.5 cup butter, at room temperature
  • 0.75 cup white sugar
  • 0.25 teaspoon salt
  • 1.75 ounces 70% dark chocolate, melted
  • 1 tablespoon cocoa powder
  • 0.25 teaspoon instant espresso powder
  • 1 cup all-purpose flour
  • 0.5 cup semisweet chocolate chips
  • 0.5 cup roasted hazelnuts, chopped
  • 0.25 cup roasted hazelnuts, finely ground
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and prepare 2 baking sheets by lining them with parchment paper.
  • In a large bowl, cream butter with an electric mixer until fluffy. Mix in sugar and salt until combined. Add egg and vanilla extract, beating well. Stir in melted chocolate, cocoa powder, and espresso. Gradually incorporate flour until smooth. Gently fold in chocolate chips, chopped hazelnuts, and ground hazelnuts.
  • Spoon mounds of cookie dough onto baking sheets, spacing 2 inches apart. Press the back of a wet fork onto each cookie to create a decorative crisscross pattern.
  • Place in the oven that has been preheated until mixture is set and edges begin to darken, which should take approximately 15 minutes. Allow to cool for a few minutes before serving.
