Double chocolate brownies

Decadent dark chocolate brownies filled with chunks of white chocolate.
Ingredients:
  • Melted butter, to grease
  • 200g pkt dark cooking chocolate, coarsely chopped
  • 150g butter, chopped
  • 3 eggs, lightly whisked
  • 155g (3/4 cup) caster sugar
  • 35g (1/3 cup) Cocoa Powder
  • 150g white chocolate, broken into squares
Instructions:
  • Preheat your oven to 160°C. Brush a 16 x 26cm slab pan with melted butter and line it with overhanging non-stick baking paper.
  • Melt the chocolate and butter in a large heatproof bowl over simmering water, ensuring the bowl doesn't touch the water. Stir until smooth, then let it cool for 5 minutes.
  • Mix the egg into the chocolate mixture until fully incorporated. Combine sugar and flour in a large bowl, then sift in cocoa powder. Add the chocolate mixture and stir until mixed. Fold in the white chocolate before pouring into the prepared pan.
  • Bake for 40 minutes, or until a skewer inserted into the center comes out with crumbs clinging to it. Allow the dish to cool in the pan for 6 hours or overnight before serving.
