Moist pumpkin bread with chia seeds - a delicious taste of fall!
Ingredients:
  • 1 egg white
  • 2 large eggs
  • 1.75 cups whole wheat flour
  • 0.5 teaspoon pumpkin pie spice
  • 0.25 teaspoon ground nutmeg
  • 0.33333334326744 cup canola oil
  • 0.33333334326744 cup pumpkin beer
  • 0.5 (15 ounce) can pumpkin puree
  • 0.25 cup chia seeds
  • 0.25 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously spray a 9x5-inch loaf pan with cooking spray. In a separate bowl, mix together flour, salt, baking soda, cinnamon, pumpkin pie spice, and nutmeg; set aside.
  • In a large bowl, combine sugar, canola oil, whole eggs, egg white, pumpkin beer, and pumpkin puree. Beat until smooth. In a separate small bowl, whisk chia seeds and water then stir into the pumpkin mixture until well-blended. Gradually mix in the flour until smooth. Pour batter into loaf pan and top with chopped walnuts.
  • Bake in the preheated oven for about 50 minutes, or until a knife inserted into the center comes out clean. Allow it to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
