Double-Berry Muffins

Bursting with two berries, these muffins are ready to bake in just 15 minutes for a delightful treat!
Ingredients:
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 cup fat-free (skim) milk
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons canola or vegetable oil
  • 1/2 teaspoon vanilla
  • 1 egg or 1/4 cup fat-free cholesterol-free egg product
  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 3 teaspoons baking powder
  • 1/2 cup fresh or frozen (thawed and drained) raspberries
  • 1/2 cup fresh or frozen (thawed and drained) blueberries
Instructions:
  • Preheat oven to 400°F. Prepare a 12-cup medium muffin tin with paper liners or grease bottoms with shortening. Combine brown sugar and cinnamon; set aside.
  • In a large bowl, whisk together milk, applesauce, oil, vanilla, and egg until combined. Add flour, granulated sugar, baking powder, and salt, stirring until just moistened (batter should be lumpy). Gently fold in raspberries and blueberries. Divide batter among muffin cups and sprinkle tops with brown sugar mixture.
  • Bake for 20-25 minutes until beautifully golden. Then transfer to a wire rack. Enjoy warm if preferred.
