Indulge in rich chocolate muffins packed with nutritious whole wheat flour and high-fiber cereal.
Ingredients:
  • 1 cup Fiber One™ original bran cereal
  • 1 1/3 cups buttermilk
  • 1/4 cup canola or vegetable oil
  • 1 egg
  • 3/4 cup packed brown sugar
  • 1/2 cup Gold Medal™ whole wheat flour
  • 1/2 cup Gold Medal™ all-purpose flour
  • 1/2 cup unsweetened baking cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/3 cup miniature semisweet chocolate chips
Instructions:
  • Preheat the oven to 375°F and line 12 regular-size muffin cups with paper baking cups. Put the cereal in a resealable plastic bag, seal it, and crush it with a rolling pin, meat mallet, or food processor.
  • Combine crushed cereal and buttermilk in a medium bowl and allow to sit for 5 minutes. Mix in oil and egg, followed by all remaining ingredients except chocolate chips. Fold in chocolate chips and distribute batter evenly into muffin cups.
  • Bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Remove from the pan immediately and serve warm.
