Indulge in rich chocolate pudding made with chocolaty soymilk and decadent chocolate chips for a delightful twist.
Ingredients:
  • 1 1/2 cups light chocolate soymilk
  • 2 tablespoons packed brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla
  • 1/4 cup miniature semisweet chocolate chips
Instructions:
  • Combine all ingredients, excluding chocolate chips, in a 1-quart saucepan. Stir continuously over medium-high heat until the mixture thickens and comes to a boil. Let it boil for 1 minute, stirring constantly.
  • Take the pot off the heat and gently swirl in the chocolate chips until they are completely melted and the pudding is velvety smooth.
  • Divide the mixture into 5 serving dishes; chill in the refrigerator for at least 30 minutes before serving cold.
