Doughnut espresso martini recipe

Indulgent dessert mixing tiramisu, affogato, and baked doughnuts.
Ingredients:
  • Cocoa powder, to dust
  • 250g tub mascarpone
  • 250ml (1 cup) thickened cream
  • 24.00 gm icing sugar mixture
  • 8 scoops coffee-flavoured ice-cream with chocolate-coated almonds
  • 290g pkt Glazed Baked Doughnuts mix
  • 60ml (1/4 cup) milk
  • 80ml (1/3 cup) vodka
  • 80ml (1/3 cup) Kahlúa coffee liqueur
  • 80ml (1/3 cup) espresso coffee, cooled
Instructions:
  • To prepare scrumptious doughnuts, preheat your oven to 200C/180C fan forced and grease eight 7cm doughnut pans. Bake the doughnuts as per the instructions on the packet using the oil, milk, and egg specified here (excluding the glaze). Allow them to cool down completely.
  • Combine all the ingredients in a stylish jug to create the perfect espresso martini.
  • In a large bowl, combine the mascarpone, cream, and icing sugar. Stir in 1 tablespoon of the martini mixture. Whisk with a balloon whisk until soft peaks form.
  • Slice each doughnut horizontally into thirds. Spoon 1 tablespoon of mascarpone mixture into the bottom of 4 martini or serving glasses. Add a doughnut slice on top. Drizzle 1 tablespoon of the remaining martini mixture over the doughnut. Layer with another tablespoon of mascarpone mixture. Repeat the layers with another doughnut slice, mascarpone mixture, martini mixture, and finish with a doughnut slice.
  • Place delightful scoops of ice cream on top of the glasses and artfully adorn them with the leftover doughnut slices. Drizzle the remaining martini mixture over the top and finish by sprinkling with a touch of cocoa before serving.
