Doughnuts of easter (rosquillas de semana santa)

Spanish Easter cake-like treats, similar to doughnuts but without yeast. Deliciously unique!
Ingredients:
  • 2 eggs, at room temperature
  • 335g (1 1/2 cups) caster sugar
  • 4.00 gm baking powder
  • 31.50 gm fresh orange juice
  • 250ml (1 cup) sunflower oil
  • 1 tsp lemon rind, finely grated
  • 350g (2 1/3 cups) plain flour, sifted
  • 7.50 gm ground cinnamon
Instructions:
  • In a large bowl, whisk together eggs, 115g (1/2 cup) sugar, and baking powder until light and fluffy. Stir in orange juice, 1 tablespoon oil, and lemon rind until well combined.
  • In a bowl, place the flour and make a well in the center. Add the egg mixture into the well. Combine using a wooden spoon, then use your hands to mix until a dough forms.
  • On a lightly floured surface, knead the dough until smooth, then divide it into 16 portions. Roll each portion into a ball and create a hole in the center with your finger. Gently stretch the balls into oval rings.
  • Mix the remaining caster sugar and cinnamon in a bowl, and keep it to the side.
  • Heat the rest of the oil in a large frying pan over medium heat. Cook 4 dough rings for 1 1/2 minutes on each side until golden brown. Transfer to a paper towel using tongs, coat with the sugar mixture, and place on a plate. Repeat for the remaining dough rings in 3 more batches.
  • Enjoy right away, accompanied by a glass of Spanish sherry, if desired.
