Dr Pepper Bacon Brownies

Indulgent bacon Dr Pepper brownies with milk chocolate chips and a sweet frosting.
Ingredients:
  • cooking spray
  • 1 (12 fl oz) can caffeinated pepper-type soda (such as Dr Pepper®)
  • 1 cup butter
  • 12 strips bacon, chopped
  • 0.25 cup cocoa powder
  • 1 teaspoon ground cinnamon
  • 0.5 cup buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 (12 ounce) bag milk chocolate chips
  • 0.5 cup butter
  • 3 tablespoons unsweetened cocoa powder
  • 1 (16 ounce) package confectioners' sugar
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) while generously greasing a 12x18-inch pan with cooking spray.
  • In a saucepan over medium-low heat, melt 1 cup of butter with 1 cup of pepper-type soda. Let it cool after the butter has melted, around 3 to 5 minutes.
  • Cook the bacon in a large skillet over medium-high heat, flipping occasionally, until it's evenly browned, for approximately 8 minutes. Remove and let it drain on paper towels.
  • Combine flour, white sugar, 1/4 cup cocoa powder, cinnamon, and salt in a large bowl, stirring until well mixed.
  • Combine buttermilk, vanilla extract, and baking soda in a small bowl and whisk. Pour the flour mixture and mix until blended. Add the butter mixture, 1/3 of the bacon, and chocolate chips; mix thoroughly. Spread the batter in the prepared pan.
  • Bake in the preheated oven for 25-30 minutes until the top is dry and the edges have begun to pull away from the sides of the pan.
  • In a saucepan, combine 6 tablespoons of pepper-type soda, 1/2 cup of butter, and 3 tablespoons of cocoa powder. Bring to a boil, then remove from heat. Stir in half of the remaining bacon and confectioners' sugar, whisking until the frosting is smooth.
  • Cover the brownies in a smooth layer of frosting and top with the rest of the crispy bacon. Allow the frosting to firm up by cooling for around 20 minutes. Slice into squares and enjoy!
