Impress kids with a magical dragon castle cake.
Ingredients:
  • 4 x 340g packets golden butter cake mix or 4 quantities Homemade butter cake (see related recipe)
  • 3 quantities Buttercream icing (see related recipe)
  • Royal blue gel food colouring (see note)
  • 6 ice-cream cones
  • 6 ice-cream cups
  • Gel food colourings (black and violet - see note)
  • 1 1/2 x 100g blocks milk chocolate, broken into large squares
  • 8 large boiled lollies (green and purple)
  • 1/2 x 26g curly wurly chocolate bar
  • 6 small jubes, halved (see note)
  • 16 malt stick biscuits, halved
  • 250g black jelly beans
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 6cm-deep, round cake pan (22cm base) and a square cake pan (23cm base). Line the bases and sides with baking paper.
  • Prepare and bake 2 packet cakes in a 22cm round cake pan following packet directions or use a homemade butter cake recipe. Smooth the surface and bake for 1 hour until a skewer inserted in the center comes out clean. Repeat with the remaining 2 cakes in a 23cm square cake pan. Let them cool on a wire rack after standing in pans for 10 minutes.
  • Prepare a delicious Buttercream icing and add a pop of color by tinting it with blue food coloring.
  • Trim cakes with a serrated knife as needed. Cut square cake into two smaller rounds, one 15cm and one 9cm using templates. Stack cakes on cake board in descending order of size (22cm, 15cm, 9cm) with icing between layers and cover entire cake with icing.
  • Trim the top of two cones by 3cm and 2 cups (see note). In a glass bowl, mix 1/2 teaspoon of black food coloring with 1 1/2 tablespoons of cold water. Brush the ice-cream cups with the black color and place them on a baking tray lined with baking paper. In another glass bowl, combine 1/2 teaspoon of violet food coloring with 1 1/2 tablespoons of water. Brush the ice-cream cones with the violet color. Let the ice-cream cones and cups stand for 30 minutes to dry. Use a small amount of icing to stack the ice-cream cones on top of the cups to create towers. Refer to the picture for guidance on arranging the towers on the cake.
  • - Place chocolate squares around the sides of the 22cm cake as shown in the picture. - Crush lollies by placing them in a snap-lock bag and pounding with a rolling pin. - Arrange the crushed lollies on top of the 22cm cake to create a moat. - Cut the curly wurly chocolate in half and trim into door shapes. Press onto the side of the 15cm cake to create doors. - Press halved jubes onto the side of the 15cm and 9cm cakes to form windows. - Create a fence by arranging halved malt sticks around the top of the 15cm cake. - Arrange 16 black jelly beans around the top of the 9cm round cake to create a border. - Scatter the remaining jelly beans around the base of the cake and towers to form rocks. - Position the dragons on the cake and serve.
