Ingredients:
  • 1.2 kg mixed green and runner beans
  • 2 cloves of garlic
  • red wine vinegar
Instructions:
  • Prepare the mixed green and runner beans by finely grating garlic into a small bowl, then adding 2 tablespoons each of extra virgin olive oil and red wine vinegar, along with a pinch of sea salt and black pepper. Mix well, cover, and refrigerate overnight. When ready to serve, cook the beans in boiling water for 7 minutes until just soft. Drain and toss with the dressing. Serve hot or at room temperature. Enjoy with the Slow-roasted lamb.
