Create stunning yeasted fruit bread with sweet glaze for a special breakfast or brunch.
Ingredients:
  • 3 cups Gold Medal™ all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon or cardamom
  • 1 package fast-acting dry yeast (2 1/4 teaspoons)
  • 1 1/4 cups very warm water (120°F to 130°F)
  • 1/4 cup butter or margarine, melted
  • 1 egg
  • 1 cup diced dried fruit and raisin mixture (from 7-oz bag)
  • 1/2 cup powdered sugar
  • 1/4 teaspoon vanilla
  • 2 to 3 teaspoons milk
Instructions:
  • Coat a 9x5-inch loaf pan with cooking spray, ensuring the bottom and sides are well covered.
  • In a large bowl, combine 2 cups of flour with granulated sugar, salt, cinnamon, and yeast. Add water, butter, and egg, then beat with an electric mixer on medium speed for 3 minutes, scraping the bowl regularly. Fold in dried fruit and the remaining 1 cup of flour to create a thick batter.
  • Smooth the batter in the pan using floured hands to shape it. Cover gently with loosely wrapped plastic wrap sprayed with cooking spray. Allow to rise in a warm spot for 45 to 60 minutes until it has doubled in size.
  • Preheat oven to 375°F. Unwrap the loaf and bake for 40 to 45 minutes, or until it sounds hollow when tapped. Remove from the pan and place top side up on a cooling rack. Let it cool completely for about 1 hour.
  • Combine glaze ingredients in a small bowl, ensuring a smooth and drizzle-worthy consistency. Drizzle over the top of the loaf.
