Sushi-inspired halibut with zesty lemon-mayo sauce, mushrooms, and onions.
Ingredients:
  • 2 pounds halibut, cut into bite size pieces
  • 1 cup mayonnaise
  • 1 teaspoon fresh lemon juice
  • 0.75 teaspoon chile-garlic sauce
  • 0.5 teaspoon white sugar
  • 0.5 teaspoon soy sauce
  • 0.125 teaspoon sesame oil
  • 4 cups thinly sliced mushrooms
  • 2 cups thinly sliced onions
  • 1 lemon, cut in half
  • Kosher salt, to taste
  • 1 tablespoon sesame seeds
  • 0.75 cup sliced green onions
Instructions:
  • Preheat oven to 375°F (190°C) for a perfect bake.
  • Position an oven rack in the center of the oven.
  • Prepare a baking sheet by lining it with aluminum foil and spraying a layer of cooking spray.
  • Lay the halibut pieces closely together on the baking sheet.
  • Combine mayonnaise, lemon juice, chili garlic sauce, sugar, soy sauce, and sesame oil in a bowl, then gently fold in the mushrooms and onion.
  • Lavishly coat the halibut pieces with the mushroom mixture.
  • Drizzle the juice of half a lemon over the mushrooms; season with Kosher salt for the perfect balance of flavors.
  • Bake in the oven until fish is nearly cooked through, 15 to 20 minutes; then, take out the baking sheet from the oven.
  • Move the baking sheet with the food to the higher oven rack and switch the oven setting to broil.
  • Broil the fish until the top is beautifully browned for about 10 minutes.
  • Evenly drizzle the remaining lemon half over the fish.
  • Garnish with sesame seeds and green onions.
