Earl Grey tea-infused pie - a delightful, creamy dessert perfect for any occasion.
Ingredients:
  • 3 cups milk
  • 8 Earl Grey tea bags
  • 1 cup white sugar
  • 0.33333334326744 cup cornstarch
  • 4 egg yolks, lightly beaten
  • 3 tablespoons butter
  • 2 teaspoons vanilla extract
  • 1 (9 inch) baked pie shell
  • 2 cups heavy cream
Instructions:
  • In a medium saucepan, gently warm the milk over medium heat until it starts to steam, which should take about 2 to 3 minutes. Remove the saucepan from the heat and add the Earl Grey tea bags, allowing them to steep for 5 minutes.
  • Discard tea bags, then blend in sugar, cornstarch, and salt. Simmer over medium heat until thick and bubbling, for 5 to 7 minutes. Lower the heat to simmer for an additional 2 minutes. Remove from heat and allow to cool slightly.
  • In a bowl, add egg yolks. Gradually whisk in 2 cups of hot tea mixture. Transfer the egg mixture into a saucepan, bring to a gentle boil over medium-low heat, and cook for 2 minutes while stirring. Remove from heat and strain into a clean bowl. Mix in butter and vanilla extract.
  • Transfer the mixture into the pie crust and refrigerate for 2 hours.
  • In a mixing bowl, whip heavy cream with an electric mixer until stiff peaks form in about 3 to 4 minutes. Spread the whipped cream over the chilled pie before serving.
  • Chill the pie in the refrigerator for 2 hours, or until it is set.
