Decadent earthquake cake: coconut-pecan layer, German chocolate cake, sweet cream cheese topping.
Ingredients:
  • 1 cup flaked coconut
  • 1 cup chopped pecans
  • 1 (18.25 ounce) package German chocolate cake mix
  • 1 1/4 cups water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 (8 ounce) package cream cheese
  • 0.5 cup butter
  • 4 cups confectioners' sugar
Instructions:
  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking pan. Spread coconut and pecans evenly on the bottom of the pan.
  • Combine cake mix, water, oil, and eggs in a large bowl, using an electric mixer on medium speed until fully incorporated. Pour mixture over coconut and pecans. Wash the bowl and mixer attachments.
  • Combine cream cheese, butter, and vanilla in a bowl until blended. Gradually add confectioners' sugar until the mixture is smooth. Pour over cake batter.
  • Bake in the preheated oven for 30 minutes or until a toothpick comes out with a few moist crumbs.
