Easter egg cheesecake recipe

No-bake rainbow cheesecake: a stunning year-round dessert with Easter charm.
Ingredients:
  • 250g pkt Arnott’s Choc Ripple biscuits
  • 100g butter, melted
  • 3 x 125g pkt speckled milk chocolate Easter eggs
  • 750g cream cheese, at room temperature, chopped
  • 600ml thickened cream
  • 150g (1 cup) icing sugar mixture
  • 36.00 gm gelatine powder
  • Blue food colouring, to tint
  • Pink food colouring, to tint
  • Green food colouring, to tint
  • 17.40 gm vanilla extract
  • 2.50 gm cocoa powder
Instructions:
  • Prepare a 22cm springform cake pan by greasing it and lining the base with baking paper. Set the pan on a baking tray.
  • In a food processor, pulse the biscuits until crushed. Add butter and pulse until combined. Mix in 1 packet of speckled eggs until well combined. Press the mixture firmly and evenly into a prepared pan using the back of a spoon. Chill in the fridge until needed.
  • Combine cream cheese, cream, and icing sugar in a food processor until silky smooth. Separate mixture into 3 bowls.
  • In a small microwave-safe bowl, combine 2 tablespoons of water with 1 tablespoon of gelatine. Microwave for 10 seconds until hot, then whisk with a fork until gelatine dissolves. Let it cool slightly. Add the gelatine mixture to the cream cheese, tint with blue food coloring, and mix well. Pour the mixture over the chilled base, smooth the top, and refrigerate for 30 minutes until almost set.
  • Continue creating two additional layers by following the same process with the remaining gelatine, cream cheese, and food coloring. Refrigerate for 30 minutes after adding each layer.
  • Prepare the speckle mix by mixing all the ingredients in a small bowl. Cover your work surface with tea towels or newspaper. Use a small, stiff pastry brush or new paintbrush to gently tap the speckle mix onto the cake for a speckled effect. Chill in the fridge for 10 minutes. Transfer the cheesecake to a cake plate and garnish with the remaining speckled eggs before serving.
