Vibrant coconut flakes and sweet icing top these festive lamingtons, adding a burst of color to any celebration.
Ingredients:
  • 170.00 gm desiccated coconut
  • 400g unfilled sponge cake
  • 450.00 gm icing sugar mixture
  • 125.00 gm hot water
  • Red and blue food colouring
Instructions:
  • In a large bowl, delicately sift the icing sugar and add the hot water. Mix the icing until it's smooth and reaches a thin consistency.
  • Split the coconut evenly between 2 plastic bags, then add a few drops of food coloring to each bag. Twist the tops of the bags securely, then massage the bags to distribute the color evenly through the coconut. Transfer the colored coconut onto plates. Cut egg shapes out of the cake using an oval cutter.
  • Using 2 forks, coat a piece of cake in icing, allowing excess to drip off. Place the cake on coconut, roll to coat, then transfer to a wire rack to dry. Repeat with remaining cake pieces. Store the lamingtons in an airtight container.
