Simplify your shopping list with this effortless chicken pot pie made with flaky pie crust, tender rotisserie chicken, creamy soup, and mixed vegetables. Comfort in every bite!
Ingredients:
  • 1 (10 ounce) package frozen mixed vegetables
  • cooking spray
  • 1 (14.1 ounce) package refrigerated 9-inch pie crusts, divided
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 0.5 cup milk
  • 0.5 teaspoon celery salt
  • 0.125 teaspoon ground thyme
  • 1 (3 pound) rotisserie chicken, boned and shredded
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect baking temperature.
  • In a microwave-safe bowl, heat mixed vegetables on high for 4-5 minutes. Drain excess liquid.
  • Lightly coat a 9-inch pie plate with cooking spray and gently press the 1 pie crust into the bottom of the plate.
  • Combine condensed soup, mayonnaise, milk, celery salt, garlic powder, pepper, and thyme in a large bowl. Mix in chicken and vegetables. Pour mixture into bottom pie crust. Top with remaining crust, trim, and seal edges with a fork. Cut 3 slits in the center. Cover crust edges with foil.
  • Bake in the preheated oven for 30 minutes. Uncover and bake until the crust is golden and flaky, for an additional 5 to 10 minutes.
