Lighter one-pot chicken Alfredo made with almond milk and flavorful chicken broth for a delicious twist.
Ingredients:
  • 2 tablespoons vegetable oil
  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 2 cups unsweetened almond milk
  • 1 teaspoon dried basil
  • 0.75 teaspoon dried oregano
  • 1 pinch ground nutmeg
  • 16 ounces tricolor rotini pasta
  • 1 cup grated Parmigiano-Reggiano cheese, or more to taste
  • 0.25 cup Greek yogurt
Instructions:
  • In a large pot over medium heat, heat vegetable oil. Add chicken, onion, and garlic. Season with salt and black pepper, and cook until chicken is no longer pink and lightly browned, about 5-7 minutes. Sprinkle flour over chicken, stir, and cook for 1 minute. Pour in chicken broth and almond milk. Add basil, oregano, and nutmeg. Stir to combine.
  • Add rotini pasta to the mixture and bring it to a boil over medium-high heat. Cover, simmer on low heat, and cook for about 10 minutes until the sauce slightly thickens and the pasta is cooked, stirring occasionally.
  • Take off the heat and gently fold in Parmesan cheese and Greek yogurt. Season to your liking with more salt and black pepper. The mixture will thicken as it cools. Optionally, garnish with extra Parmesan cheese before serving.
