Ingredients:
  • 1 pint pumpkin spice-flavored ice cream, melted (see Recipe Note)
  • 2 large egg yolks
  • 4 teaspoons sugar
Instructions:
  • Preheat the oven to 325°F and bring a kettle of water to a boil for baking the custard.
  • Prepare the custard by smoothly blending the melted ice cream with the egg yolks in a medium bowl until fully combined.
  • Bake the custard: Nestle four 3-ounce ramekins in a square baking dish and fill evenly with custard to the brim. Create a water bath by pouring boiling water halfway up the ramekins. Bake until the edges are set and the center slightly jiggles, approximately 40 minutes.
  • Cool the baked custard: Gently lift the ramekins out of the water bath and let them cool on the counter until they reach room temperature, approximately 1 hour. Optionally, place them on a wire rack. Once cooled, cover with plastic wrap and refrigerate for a minimum of 2 hours until fully set.
  • To caramelize and serve: Sprinkle 1 teaspoon sugar evenly over each crème brûlée just before serving. Use a kitchen torch to melt the sugar until golden brown, holding the flame about 4 inches away. Alternatively, place the ramekins on a baking sheet and broil on high for 3 to 4 minutes, ensuring close supervision. Serve immediately. Enjoy!
