Homemade aioli: garlicky flavor bomb for veggies, fish, sandwiches, and fries - your crave-worthy secret sauce!
Ingredients:
  • 2 cloves garlic, finely chopped
  • 1/8 teaspoon kosher or coarse salt, plus more to taste
  • 1 large egg yolk, at room temperature
  • 2 teaspoons lemon juice
  • 1/2 cup mild-tasting olive oil, or 1/4 cup olive oil plus 1/4 cup vegetable oil
Instructions:
  • Create a smooth garlic paste: Combine garlic and salt in a mortar, then mash together until a smooth paste forms. If you don't have a mortar, spread the garlic and salt on a cutting board and use a large, heavy knife to drag across them until a smooth paste forms.
  • To create a stable emulsion, place the bowl on a damp towel for grip. Combine egg yolk and lemon juice in the bowl. Use a measuring cup with a spout for the olive oil. Slowly drizzle oil into the yolk mixture, whisking constantly and gradually increasing the flow. If separation occurs, pause and whisk until fully combined before continuing.
  • Incorporate half of the garlic into the mixture. Adjust seasoning with additional salt and garlic to suit your preference.
  • Adjust consistency: For a thinner aioli, slowly whisk in more oil; for a thicker consistency, whisk in a few drops of water or lemon juice.
  • Chill: Transfer to a small bowl, cover with plastic wrap, and refrigerate until needed. Aioli stays fresh in the refrigerator for 3 to 5 days. If you enjoyed the recipe, please leave a star rating and comment below!
