Quick and easy Alice Springs chicken casserole: bacon-wrapped chicken, baked with cheese.
Ingredients:
  • 2 skinless, boneless chicken breasts
  • salt and ground black pepper to taste
  • 4 slices hickory-smoked thick-cut bacon
  • 1.5 cups shredded mild Cheddar cheese
  • 2 limes, halved
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Arrange the chicken breasts in a baking dish and generously season them with salt and pepper.
  • Cook the chicken in the preheated oven until it is cooked through but still slightly pink in the center, approximately 25 minutes. Take it out of the oven.
  • In a large skillet over medium heat, crisp up the bacon until most of the fat has rendered, about 5 minutes. Place the bacon on a paper towel-lined plate to drain. Then, wrap 2 strips of bacon around each chicken breast in the baking dish.
  • Place the chicken back in the oven and bake until the bacon is crispy and the chicken is fully cooked, approximately 15 minutes. Ensure the chicken reaches an internal temperature of 165°F (74°C) using an instant-read thermometer.
  • Top chicken with a generous amount of gooey melted Cheddar cheese and bake for 2 to 5 minutes until bubbly. Serve with fresh limes on the side.
