Asian-inspired rice-filled lettuce wraps for a flavorful meat-free meal.
Ingredients:
  • 1 splash olive oil
  • 1 cup rice
  • 0.25 cup chopped onion
  • 1 clove garlic, chopped
  • 1 cup vegetable broth
  • 1.5 cups water
  • 1 head romaine lettuce leaves
  • 1 dash soy sauce, or to taste
  • 1 splash lime juice, or to taste
Instructions:
  • In a large saucepan over medium heat, sizzle rice in oil until golden for 3 to 5 minutes. Add onions and garlic, cook until the onion softens, about 5 to 7 minutes.
  • In a saucepan, combine the vegetable broth and water, bring to a boil, then lower the heat, cover, and simmer the rice until tender and liquid is absorbed, about 10 to 15 minutes. Fluff the rice and cook for an additional 1 to 2 minutes.
  • Fill lettuce leaves with flavorful rice mixture and drizzle with soy sauce or lime juice to taste.
