Easy apple and berry salad

Vibrant salad with sweet apples, berries, and crunchy nuts makes entertaining a breeze.
Ingredients:
  • 40.00 ml roughly chopped pecans
  • 40.00 ml roughly chopped skinless hazelnuts
  • 1/2 tsp chopped fresh thyme leaves
  • 27.00 gm maple syrup
  • 20.00 ml white balsamic vinegar
  • 21.00 gm lemon juice
  • 2 small red apples, halved, cored, sliced
  • 80g mixed salad leaves
  • 2 celery stalks, sliced
  • 125g blueberries
  • 125g raspberries
  • 50g goat’s cheese, crumbled
Instructions:
  • Preheat your oven to 200C/180C fan-forced, then prepare a baking tray by lining it with parchment paper.
  • Spread a mixture of pecans, hazelnuts, and thyme on a baking tray. Drizzle with maple syrup and season with salt and pepper. Bake for 4 to 5 minutes until golden and toasted. Allow to cool before serving.
  • Whisk together oil, vinegar, and lemon juice in a large bowl. Coat apple with 1 tablespoon of the dressing.
  • On a serving plate, elegantly layer salad leaves, apple, celery, blueberries, and raspberries. Generously sprinkle cheese and nut mixture on top. Finish with a drizzle of the remaining dressing. Serve and enjoy!
