Indulge in irresistible apple-cranberry squares with a touch of Bisquick® mix, perfect with a dollop of ice cream.
Ingredients:
  • 2 1/2 cups Original Bisquick™ mix
  • 1 1/2 cups quick-cooking oats
  • 1 cup packed brown sugar
  • 1 cup cold butter or margarine
  • 1/2 cup chopped pecans
  • 8 cups thinly sliced peeled apples (about 5 large)
  • 1 bag (6 oz) sweetened dried cranberries
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 container (8 oz) sour cream
  • 3 eggs
  • 1/2 gallon vanilla ice cream
Instructions:
  • Preheat the oven to 375°F and generously spray a 15x10-inch pan with cooking spray.
  • Combine Bisquick mix, oats, and brown sugar in a large bowl. Use a pastry blender (or two table knives) to cut in butter until the mixture is crumbly. Transfer 1 1/2 cups of the crumb mixture to a small bowl and mix in pecans for the topping. Press the remaining crumb mixture into the bottom of the pan.
  • Combine apples, cranberries, sugar, and cinnamon in a large bowl. In a separate small bowl, whisk together sour cream and eggs. Pour the sour cream mixture over the apple mixture and toss to ensure everything is coated. Spoon the filling over the crust and then sprinkle the reserved crumb/nut mixture over the filling.
  • Bake for 45 to 55 minutes, or until the topping is golden brown and the apples are tender. Let it cool for 30 minutes, then cut into 8 rows by 4 rows. Serve warm with a scoop of ice cream.
