Homemade chocolate chip raisin cookies recipe yields 72 delicious cookies, with 9 per batch. Skip the expensive prepackaged mixes!
Ingredients:
  • 1.5 cups quick-cooking oats
  • 0.75 cup all-purpose flour
  • 0.25 teaspoon baking soda
  • 0.75 cup packed brown sugar
  • 0.5 cup shortening
Instructions:
  • Combine oats, flour, baking soda, and brown sugar in a bowl. Add shortening and mix until it resembles cornmeal without any lumps of shortening. Portion out 1/2 cup of the mix into labeled and dated re-sealable bags or containers for storage. Store in a cool, dry place for up to 12 weeks.
  • Prepare the cookie dough by combining one package of mix with 2 teaspoons of water, 1 tablespoon of raisins, and 1 tablespoon of mini semisweet chocolate chips. Mix thoroughly and form small balls using a teaspoon. Flatten the balls on an ungreased cookie sheet with a glass bottom greased with butter and dipped in sugar. Bake according to your oven's instructions.
