Easy Baked Chicken and Potato Dinner for Two

A cozy baked dish for two, capturing the essence of roast chicken with veggies.
Ingredients:
  • 2 boneless skinless chicken breast halves (1/2 pound)
  • 2 tablespoons Dijon mustard
  • 1/2 cup Bisquick Heart Smart® mix or Original Bisquick™ mix
  • 3/4 pound small red potato, cut into fourths
  • 1 small red or green bell pepper, cut into 1/2-inch pieces
  • 1 small onion, cut into 8 wedges
  • Cooking spray
  • 2 tablespoons grated Parmesan cheese, if desired
  • 1/2 teaspoon paprika
Instructions:
  • Preheat oven to 400°F and generously coat a 13x9x2 inch baking dish with cooking spray.
  • Coat chicken with 1 tablespoon of mustard, then cover with Bisquick mix. Arrange chicken breast halves in corners of pan and place potatoes, bell pepper, and onion in the center. Brush vegetables with remaining mustard. Spray everything with cooking spray, then top with cheese and paprika.
  • Roast in the oven for 35 to 40 minutes, remember to gently toss the vegetables halfway through cooking time. The dish is ready when the potatoes are fork-tender and the chicken runs clear when cut through the thickest parts.
