Quick and customizable beef enchiladas for a crowd-pleasing meal.
Ingredients:
  • 2 pounds ground beef
  • 0.25 cup chopped onion
  • 2 cups shredded Cheddar cheese, divided
  • 0.5 cup sour cream
  • 1 tablespoon taco seasoning
  • 1 pinch salt and ground black pepper to taste
  • 2.5 cups red enchilada sauce
  • 1.5 teaspoons chili powder
  • cooking spray
  • 1 (10 ounce) package flour tortillas
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (6 ounce) can sliced black olives, drained
Instructions:
  • Preheat the oven to 350°F (175°C) while you generously grease a 9x13-inch casserole dish with cooking spray.
  • In a skillet, sauté ground beef and onion until beef is browned and crumbly, around 5 to 7 minutes. Discard excess grease. Add 1 cup of Cheddar cheese, sour cream, taco seasoning, and pepper, stir until cheese is melted. Mix in red enchilada sauce, chili powder, and salt.
  • Microwave tortillas for 1 minute to warm them up. Fill each tortilla with 1/4 cup of the beef mixture, then roll them up and lay them in a casserole dish, seam-side down. Top with any extra sauce, black beans, and olives, then sprinkle with the remaining cheese.
  • Bake until the cheese is gooey and the filling is bubbling, about 20 minutes in the preheated oven.
