Crispy garlic and dill seasoned beet chips - a flavorful snack or salad topper!
Ingredients:
  • 6 medium beets, scrubbed and ends trimmed
  • 0.5 teaspoon salt, or more to taste
  • 1 tablespoon olive oil
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon cracked black pepper
  • 0.25 teaspoon dill
Instructions:
  • Using a mandoline, thinly slice the beets to about 1/16-inch thickness. Transfer the beet slices to a bowl, sprinkle with salt, and toss well to combine. Let the beets sit for about 30 minutes to allow the flavors to meld. Drain off any excess liquid before proceeding.
  • Preheat the oven to a cozy 300 degrees F (150 degrees C) and prepare 2 baking sheets with parchment paper.
  • Drizzle beets with olive oil and toss to coat. In a small bowl, combine garlic powder, black pepper, and dill; sprinkle over beets and toss to ensure even coating. Arrange beet slices in a single layer on baking sheets.
  • Bake in the preheated oven for 40 to 50 minutes until golden and crispy. If desired, sprinkle with extra salt before serving.
