Indulge in a hearty roasted beet salad with creamy goat cheese, showcasing its vibrant colors by gently handling it for a striking presentation.
Ingredients:
  • 4 medium beets, peeled and cut into 1-inch pieces
  • 0.25 cup extra-virgin olive oil, plus more for drizzling
  • sea salt to taste
  • 0.5 medium lemon
  • 0.5 cup chopped green onion, green parts only
  • 6 ounces goat cheese, crumbled
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Drizzle chopped beets with olive oil, sprinkle with salt, and spread out in a baking dish. Squeeze fresh lemon juice over the top, then cover the dish tightly with foil.
  • Roast in the oven until the beets are tender, approximately 1 hour. Let cool at room temperature for around 10 minutes before serving.
  • In a bowl, mix together the cooled beets and green onion. Sprinkle crumbled goat cheese on top. Drizzle with olive oil and add more sea salt to taste.
