Colorful beet hummus: blend cooked beets, chickpeas, tahini, garlic, and lemon juice for a vibrant and tasty dip!
Ingredients:
  • 2 small cooked beets, chopped
  • 1 (15 ounce) can chickpeas, drained with liquid reserved
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons tahini
  • 1 clove garlic, minced
  • 0.75 teaspoon salt
  • 0.25 teaspoon cumin
Instructions:
  • In a food processor, blend together beets, chickpeas, lemon juice, tahini, garlic, salt, and cumin until smooth. While blending, slowly add reserved chickpea liquid until hummus reaches desired consistency.
