Whip up a foolproof Hollandaise sauce in just 10 minutes using your blender. Perfect for your next Eggs Benedict and guaranteed to elevate your brunch game!
Ingredients:
  • 10 tablespoons unsalted butter (if using salted butter, skip the added salt)
  • 3 large egg yolks (see how to separate eggs )
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne (optional)
Instructions:
  • Slowly melt the butter in a small pot, being careful not to let it boil to preserve the moisture in the butter.
  • To lighten the egg yolks, combine them with lemon juice, 1/4 teaspoon salt, and cayenne (if desired) in a blender. Blend on medium-high for 30 seconds until the mixture transforms to a lighter shade. This step adds body to the sauce by gently warming the yolks and incorporating air for a lighter hollandaise.
  • Drizzle the melted butter into the running blender in a thin stream for a few seconds until fully incorporated. Conclude by blending for an additional few seconds.
  • Taste and adjust: Turn off the blender and taste the sauce for a buttery, lemony, and lightly salty flavor. Add more lemon juice or salt to taste if needed.
