Easy Hollandaise Sauce in the Blender

Whisk butter, egg yolks, and lemon juice in blender for a delicious hollandaise sauce, perfect for fish or eggs Benedict.
Ingredients:
  • 0.75 cup unsalted butter
  • 4 large egg yolks, at room temperature
  • 3 tablespoons fresh lemon juice
  • 1.5 teaspoons kosher salt
  • 0.75 teaspoon freshly ground black pepper
  • 2 pinches ground cayenne pepper
  • 2 dashes hot sauce (such as Tabasco®)
Instructions:
  • Heat the butter in a small saucepan until melted.
  • In a blender, blend egg yolks, lemon juice, salt, pepper, and cayenne for 15 seconds. While blending on low, gradually add hot butter until sauce thickens, then mix in hot sauce.
  • Enjoy right away or let the flavors meld in the blender at room temperature for up to 1 hour before serving.
