Easy bread pudding

Irresistibly delicious and effortlessly made bread pudding.
Ingredients:
  • 4 egg yolks
  • 250ml milk
  • 250ml cream
  • 100g prune
  • 110g sultana
  • 60ml brandy
  • 280g breadcrumbs
  • 300ml milk
  • 50g unsalted butter, melted
  • 1.25 gm ground cinnamon
  • 1/2 tsp grated nutmeg
  • 100g dark brown sugar
  • 8.80 gm vanilla extract
  • 1 egg, beaten
  • Icing sugar, to serve
  • Creme anglaise or custard, to serve
  • 55g caster sugar
Instructions:
  • Preheat your oven to 180°C. Grease a 20cm cake pan, then combine fruit and brandy in a bowl, allowing it to soak for 10 minutes.
  • In a bowl, mix breadcrumbs, milk, and butter. Add spices, sugar, vanilla, fruit, and soaking liquid. Stir in the egg until thoroughly combined. Spread the mixture into the cake pan and bake for 30 minutes until golden and firm. Dust with icing sugar before serving warm with creme anglaise.
  • In a bowl, gently whisk the egg yolks. In a saucepan over medium heat, combine milk, cream, sugar, and vanilla and heat until almost boiling. Slowly pour the hot milk mixture into the eggs while whisking continuously. Transfer mixture back to the saucepan over low heat. Cook while stirring with a wooden spoon for 5-6 minutes until it coats the back of the spoon. Pour the creme anglaise into a jug, cover with plastic wrap touching the surface to avoid a skin forming, then refrigerate until ready to use.
