No prep needed for this quick and delicious breakfast casserole with ham, eggs, and veggies - no overnight soaking required!
Ingredients:
  • 5 slices bread, cubed
  • 0.5 cup sliced fresh mushrooms
  • 0.25 cup diced onion
  • 0.25 cup diced green bell pepper
  • 0.25 cup chopped ham
  • 7 eggs
  • 0.5 cup 2% milk
  • 2 teaspoons mustard
  • 2 teaspoons Worcestershire sauce
  • 0.5 teaspoon ground black pepper
  • 1 dash hot pepper sauce (such as Tabasco®), or to taste
  • 1 cup shredded Mexican cheese blend
  • 3 tablespoons grated Parmesan cheese
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then neatly arrange the bread cubes in an 8x12-inch casserole dish.
  • In a large skillet over medium heat, sizzle butter until melted. Toss in mushrooms, onion, and green pepper, and sauté until slightly tender, approximately 5 minutes. Add ham and toss until warmed, about 2 to 3 minutes. Take off heat.
  • In a separate bowl, combine eggs and milk, then mix in mustard, Worcestershire sauce, salt, pepper, and hot sauce. Add mushroom-ham mixture and cheeses, then pour into a casserole dish. Stir in bread cubes until well moistened. Cover with foil before baking.
  • Bake in the preheated oven for 25 minutes or until the eggs are set. Then, uncover and bake for an additional 5 minutes until the top is golden brown.
