Customizable breakfast egg muffins with cheese, peppers, and bacon - make ahead for a delicious grab-and-go morning meal.
Ingredients:
  • cooking spray
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 bunch green onions, chopped
  • 8 large eggs
  • 2.75 ounces fully-cooked bacon pieces (such as Oscar Mayer®)
  • 0.25 cup whole milk
  • 1 pinch onion powder, or to taste
  • 0.5 (8 ounce) package shredded mild Cheddar cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 12-cup muffin tin with cooking spray.
  • Combine bell peppers and green onions with eggs, bacon, milk, garlic powder, onion powder, salt, pepper, and Cheddar cheese in a large bowl. Whisk until well mixed, then divide the mixture evenly into the muffin cups.
  • Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool slightly before serving.
