Easy butter chicken

Make Indian butter chicken at home for a delicious take-out experience.
Ingredients:
  • Natural yoghurt, to serve
  • Roti bread, optional, to serve
  • 18.40 gm vegetable oil
  • 8 chicken drumsticks
  • 1 brown onion, coarsely chopped
  • 1 garlic clove, crushed
  • 2 tsp finely grated ginger
  • 500g jar Pataks butter chicken simmer sauce
  • 400g can crushed tomatoes
  • 125ml chicken stock
  • 125ml coconut milk
  • 150g green beans, coarsely chopped
  • 82.50 ml coriander leaves
  • Steamed basmati rice, to serve
Instructions:
  • In a large frying pan over medium-high heat, warm 2 teaspoons of oil until shimmering. Add the chicken and cook, turning occasionally, for 5 minutes or until golden brown. Then, transfer the chicken to a plate.
  • In the same pan, heat the remaining oil. Sauté onion until softened. Stir in garlic and ginger for 2 minutes. Add simmer sauce, tomato, stock, and coconut milk. Mix well and bring to a boil. Lower the heat, add chicken back to the pan, cover, and simmer for 20 minutes.
  • Add the beans and cook uncovered for 10 minutes or until the chicken is fully cooked. Stir in the lemon juice and fresh coriander leaves, then season with salt and pepper to taste.
  • Accompany your butter chicken with fragrant basmati rice, creamy natural yoghurt, and warm roti bread.
