Easy butter chicken recipe

Homemade Indian classic bursting with authentic, bold flavors.
Ingredients:
  • 125.00 ml Greek-style yoghurt
  • 2 garlic cloves, crushed
  • 3cm piece ginger, peeled, finely grated
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 1 tsp garam masala
  • 1/4 tsp chilli powder
  • 600g Free Range Chicken Thigh, cut into 3cm pieces
  • 18.40 gm vegetable oil
  • 20g butter
  • 1 brown onion, halved, thickly sliced
  • 410g can tomato puree
  • 127.50 gm liquid chicken stock
  • 126.25 gm thickened cream
  • Basmati rice, to serve
  • Coriander leaves, to serve
Instructions:
  • Combine yogurt, garlic, ginger, cumin, coriander, garam masala, and chili powder in a glass or ceramic dish. Add chicken and mix well to coat evenly. Cover and refrigerate for 2 hours.
  • In a heavy-based saucepan over medium-high heat, heat oil and butter. Sauté onion for 3 to 4 minutes until softened. Add chicken and cook for 5 minutes until it begins to change color. Stir in tomato puree and stock, then bring to a boil. Reduce heat and simmer for 10 minutes until chicken is tender and sauce thickens slightly, stirring occasionally.
  • Mix in the cream gently and season with your favorite seasonings. Let it simmer for an additional 5 minutes or until thoroughly heated. Serve alongside steamed rice and fresh coriander leaves.
