Flavorful and easy butter chicken, perfect for a quick weeknight meal.
Ingredients:
  • 500g chicken thigh fillets, chopped
  • 1/2 x 312g jar Patak’s® Butter Chicken Paste
  • 400ml can coconut cream
  • 350g green beans, halved
  • Steamed basmati rice, to serve
  • Coriander sprigs, to serve
  • Naan bread, to serve
Instructions:
  • In a saucepan over medium heat, cook the chicken and Patak’s® Butter Chicken Paste together, stirring, until the paste is aromatic and the chicken is golden, about 2-3 minutes.
  • Set aside 2 tablespoons of coconut cream and pour the rest into a pan along with 1/2 cup (125ml) water. Lower the heat, cover, and simmer for 6-8 minutes, stirring occasionally. Then, add the beans and continue to cook for an additional 4 minutes until the chicken is fully cooked. Season to taste.
  • Scoop rice into serving bowls, generously spoon curry over the top. Garnish with fresh coriander and a drizzle of reserved coconut cream. Enjoy with warm naan bread.
