Easy carbonara

Quick pasta sauce that cooks in the time it takes to boil pasta. Serves 2, easy to adjust. Pair with 75g dried or fresh pasta.
Ingredients:
  • 150 g dried spaghetti
  • 2 rashers of higher-welfare smoked streaky bacon
  • olive oil
  • 2 free-range eggs
  • 30 g Parmesan cheese plus extra for grating
Instructions:
  • Boil the pasta in salted water following package instructions. Slice the bacon, then cook with olive oil and black pepper until crispy. Beat eggs in a bowl, add Parmesan, and mix well. Add cooked pasta to the bacon, then pour in the egg mixture, stirring constantly. Add pasta water as needed for a creamy sauce. Serve topped with extra Parmesan.
