Easy sausage carbonara

Ingredients:
  • 150 g dried tagliatelle
  • 3 sausages
  • ½ a bunch of fresh flat-leaf parsley (15g)
  • 1 large egg
  • 30 g Parmesan cheese
Instructions:
  • Boil the pasta in salted water following the package instructions, then drain, saving a mugful of cooking water. Remove the sausagemeat from the casings, shape it into 18 balls with wet hands, coat them in black pepper, and cook in a non-stick frying pan with ½ tablespoon of olive oil until golden and cooked through, tossing regularly. Turn off the heat. Finely chop the parsley, including the stems, mix it with the egg and a splash of pasta water, then grate and combine most of the Parmesan. Add the drained pasta to the sausage pan, pour in the egg mixture, and toss off the heat for 1 minute. Add a splash of reserved cooking water to loosen, season with salt and pepper, and top with the remaining Parmesan. Enjoy!
