Kid-friendly carbonara meatballs - a delicious twist on a classic!
Ingredients:
  • 325g dried Italian Spaghetti
  • 500g pork sausages
  • 18.20 gm extra virgin olive oil
  • 300ml light thickened cream
  • 187.50 ml finely grated parmesan
  • 180g baby spinach
Instructions:
  • Boil pasta in a large saucepan of salted water according to packet instructions. Save 1/3 cup of cooking liquid before draining.
  • Remove sausage meat from casings and shape into tablespoon-sized balls. Brown meatballs evenly in hot oil in batches for 5 to 6 minutes until fully cooked.
  • Pour in luxurious cream and the reserved flavorful cooking liquid. Bring to a vigorous boil, then gently lower the heat. Let it simmer for 2 to 3 minutes until the sauce slightly thickens. Sprinkle in a generous 1/2 cup of parmesan cheese, then stir until the sauce becomes velvety and fully blended. Add in the pasta and fresh spinach, cooking for an additional 1 to 2 minutes until the spinach wilts and the pasta is fully coated. Serve with a final sprinkle of the remaining parmesan on top for an elegant finish.
