Sausage carbonara recipe

Quick and delicious carbonara with sausage, kale, and peas - a comforting meal that will have you coming back for more!
Ingredients:
  • 350g dried spaghetti
  • 500g pork sausages, casings discarded
  • 3 garlic cloves, crushed
  • 187.50 ml frozen green peas
  • 75g chopped kale
  • 3 eggs
  • 250.00 ml finely grated parmesan cheese
Instructions:
  • Boil pasta in a pot of salted water following package directions until tender. Save 1/4 cup of cooking liquid before draining.
  • Heat oil in a large deep frying pan over medium-high heat. Cook sausage mince in small meatball-sized amounts, turning occasionally for 5 to 6 minutes until browned and cooked through. Add garlic, peas, and kale to the pan and cook while stirring for 1 minute until heated through.
  • Whisk eggs with 3/4 cup cheese in a bowl. Season with pepper. Pour the egg mixture and reserved cooking liquid into the pan with meatballs. Take off the heat and stir for 1 to 2 minutes until the pasta is coated in sauce and the egg mixture is heated through (sauce will thicken without scrambling). Sprinkle with the rest of the cheese before serving.
